Wheat Bean Soup

This is an amazingly hearty soup that will satisfy even the most devout meat eaters.

INGREDIENTS:

  • 1 cup bulgur wheat
  • 1 can pinto or kidney beans
  • 1 medium onion, chopped
  • 1 leek, chopped
  • 2 cups vegetable stock
  • 2 garlic cloves
  • 1 large potato, diced
  • 2 Tablespoons tomato paste
  • salt and pepper to taste

INSTRUCTIONS:

1.  Begin by boiling 1 1/4 cups of water and pouring it over the bulgur wheat in a bowl.

2.  Cover the bowl and allow to stand for 30 minutes undisturbed.

3.  Sauté onion, garlic and leeks with salt until translucent.

4.  Add tomato paste and potatoes, cooking for an additional 4-5 minutes.

5.  Add stock and beans and bring to a boil.

6.  Turn off heat, add bulghur wheat, cover and allow to stand for 10 minutes.

7.  Serve!
