Vegetarian Gumbo

INGREDIENTS:
- 3/4 cup oil
- 3/4 cup Flour
- 1 large Onion chopped
- 1 bunch Green onions chopped
- 1 Green bell pepper chopped
- 1 Red bell pepper chopped
- 6 ribs Celery with leaves, chopped
- cloves Garlic minced
- 1 pound Okra sliced
- 7 cups Vegetable broth
- 3 cans (15-oz) Diced tomatoes (fire roasted or regular)
- 1/2 bunch Parsley finely chopped
- 2 Tablespoons Braggs Aminos
- 1 teaspoon Hot sauce more or less to taste
- 1 teaspoon Paprika
- salt & pepper
- 8 cups Cooked rice
INSTRUCTIONS:
1. In a large lidded stock pot, heat oil on LOW HEAT. Add flour and stir, cooking about 15 minutes until golden.
2. Add onion, garlic, peppers and celery and continue to cook on LOW HEAT, stirring frequently for 45 minutes.
3. Sauté okra in oil then add to stock pot.
4. Add stock and remaining ingredients and bring to a boil.
5. Reduce heat and simmer 2-3 hours.
6. Serve over hot cooked rice.
