INGREDIENTS:

  • 3 cups stock or water
  • 3 Tablespoons of olive oil
  • 2 cups coarsely chopped onion
  • 2 cups chopped, peeled sweet potato
  • 3 cloves garlic, minced
  • 1/2 cup celery, chopped
  • 1 cup tomatoes, chopped
  • 1 cup fresh green beans
  • 1 can chickpeas, drained
  • salt & pepper
  • 1 Tablespoon fresh basil
  • 2 teaspoons paprika
  • pinch cinnamon

INSTRUCTIONS:

1.  Sauté onion, garlic, celery and potatoes in oil for 3-5 minutes or until tender.

2.  Add stock and seasonings and simmer for 15 minutes.

3.  Add remaining ingredients and simmer on low heat for 30 minutes.
