Kitchen Sink Soup

A hearty soup that will please most anyone on a cold day!

INGREDIENTS:

  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 tomato, peeled and diced
  • 1 large onion ( or 2 medium), diced
  • 1 cup whole corn
  • 1 cup cabbage , chopped
  • 1 can chickpeas or white beans
  • 1 clove garlic, minced
  • 1 Tablespoon oregano
  • 1 Tablespoon rosemary
  • vegetable stock (optional)
  • red wine (optional)

INSTRUCTIONS:

1.     Sauté onion and garlic.

2.     Add carrots and cabbage and sauté.

3.     Add 4 cups water and remaining ingredients, bring to a boil.

4.     Add 5 cup of liquid (water, vegetable stock, red wine) and simmer for at least 1/2 hour, up to an hour before serving.

NOTE: This soup is far better the next day!
