Gourmet Split Pea Soup

INGREDIENTS:

  • 1 lb split peas, dry
  • 1 large onion or 2 leeks
  • 2 stalks celery
  • 2 cloves garlic
  • 4 cups water
  • 2 cups white wine
  • salt & pepper to taste
  • pinch cayenne pepper

INSTRUCTIONS:

1.     Sauté onion, celery and onion and add to stock pot.

2.     In the stock pot combine liquid, peas and cayenne and bring to a boil.

3.     Reduce heat and simmer 25 minutes or until peas are done.

4.     Transfer half of the soup to a blender and puree until smooth.

5.     Return to pot and heat on low.

6.     Add salt, pepper and cayenne to taste and serve.
