Crockpot Black Bean Soup

INGREDIENTS:

  • 1 cup dried black beans, presoaked
  • 1 cup whole kernel corn
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 lemon, juiced
  • 1 small can tomato paste
  • 1 teaspoon each:

o   oregano

o   parsley

o   rosemary

o   black pepper

o   sea salt

  • 2 1/2 cups water

INSTRUCTIONS:

1.     Add all ingredients to crock pot, cover and cook on low heat for 6-8 hours.  Start it in the morning and come home to a delicious meal that’s ready for the table!
