Carrot Ginger Soup

INGREDIENTS:

  • 1 Tablespoon margarine
  • 1 onion, chopped
  • 1 1/2 lbs. carrots, peeled and diced
  • 1 teaspoon fresh ginger, grated
  • 2 teaspoons coriander seeds, crushed
  • 4 cups vegetable stock or water
  • Salt and pepper, to taste

INSTRUCTIONS:

1.     Sauté the onions in margarine until translucent.

2.     Add carrots, ginger and coriander and stir over medium heat for 5-10 minutes.

3.     Add liquid and cover, cooking until tender.

4.     Puree  and serve.
