African Sunset Crock Pot Stew

INGREDIENTS:

  • 1 cup coconut milk
  • 2 cups water
  • 2 teaspoons ginger
  • 1 Kaffir lime leaf
  • 1 Tablespoon fresh lemongrass or 1 tsp. dried
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 lb. fresh spinach, chopped
  • 1 zucchini, cubed
  • 2 cups fresh pumpkin, cubed
  • 1 Tablespoon soy sauce or Braggs Aminos
  • salt and pepper to taste

INSTRUCTIONS:

1.     Combine all ingredients in a crock pot, stir, cover and cook on low for 6-8 hours.

2.     To serve, place a large spoonful of cooked rice in a bowl and ladle stew on top of it.
