African Sunset Crock Pot Stew

INGREDIENTS:
- 1 cup coconut milk
- 2 cups water
- 2 teaspoons ginger
- 1 Kaffir lime leaf
- 1 Tablespoon fresh lemongrass or 1 tsp. dried
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 lb. fresh spinach, chopped
- 1 zucchini, cubed
- 2 cups fresh pumpkin, cubed
- 1 Tablespoon soy sauce or Braggs Aminos
- salt and pepper to taste
INSTRUCTIONS:
1. Combine all ingredients in a crock pot, stir, cover and cook on low for 6-8 hours.
2. To serve, place a large spoonful of cooked rice in a bowl and ladle stew on top of it.
