A traditional southern dish goes veggie!
INGREDIENTS:
- 4 Tablespoons vegetable oil
- 1 onion, coarsely chopped
- 5 cloves of garlic, chopped
- 1 celery stick, chopped
- 1 green pepper, chopped
- 1 1/2 pounds of greens (turnips, mustards or collards)
- 1 fresh jalapeno pepper, seeded and chopped
INSTRUCTIONS:
NOTE: A Dutch oven is perfect for this recipe.
1. Wash the greens several times, rinsing repeatedly to remove all signs of dirt and grit. Remove tough stems and discard. Cut into pieces.
1. Heat oil in a large stockpot with a lid. Sauté onions, celery, pepper and garlic for 5 minutes before lowering the heat.
2. Add 1 quart of water and jalapeno pepper and half cover the pot, simmering for 45 minutes.
3. Add greens to the pot in batches, stirring until they cook down (quickly). Lower heat to simmer and cover.
4. Cook for 1 1/2 hours.
5. Serve.
