Rosemary Focaccia Bread

INGREDIENTS:

  • 1 1/2 tsp dry yeast
  • pinch sugar
  • 1 cup unbleached flour
  • 4 Tablespoons olive oil
  • garlic powder
  • fresh rosemary
  • salt

INSTRUCTIONS:

Preheat oven to 425 degrees.

1.  Activate yeast by sprinkling it into a few tablespoons of hot water and a pinch of sugar.  Let it sit for 20 minutes.

2.  In a large mixing bowl, sift flour and add salt.

3.  Form a well in the center and add yeast to the well.

4.  Carefully fold the flour into the yeast and then add oil, working it in gently.

5.  Add a few ounces of water as necessary to make a dough and knead it for 10 minutes.

6.  Return dough to mixing bowl, cover with a towel and allow to sit in a warm area until it doubles in size, about 30 minutes.

7.  Roll dough to about 1 1/4′ thickness.

8.  Spray a baking sheet with cooking spray or coat with olive oil lightly.  Sprinkle with garlic powder, salt and fresh rosemary.

9.  Bake 12 minutes.  TURN OFF OVEN and allow to remain in hot oven for 20 minutes longer.
