Roasted Red Peppers

INGREDIENTS:

  • red bell peppers

INSTRUCTIONS:

1.  Place peppers (whole) on a broiler pan covered in aluminum foil.

2.  Broil until the top side becomes blackened and turn.

3.  Continue broiling, turning regularly until all sides are blackened.

4.  Place peppers in a brown paper bag and close.  Allow to sit undisturbed for 15-20 minutes.

5.  The blackened peels should easily slide off.  Discard along with stems and seeds in to your compost pile.

6.  Cut into strips of about 1/2″ wide and pack into clean jars.  Cover with olive oil and store in the refrigerator for as long as 2 weeks.
