Potato Latkes

INGREDIENTS:

  • 2 potatoes
  • 1 onion
  • 1/2 cup all purpose flour
  • salt & pepper
  • egg or egg replacement

INSTRUCTIONS:

1.     Peel and shred potatoes and chop onion.

2.     Mix ingredients together, adding water if necessary to incorporate the flour.  Mixture should be a bit thick, but thin enough to form balls.

3.     Form balls about the diameter of a silver dollar and place in a pan or griddle with hot oil.

4.     Use a spatula to flatten ball and cook for about 5 minutes on each side or until cooked through and golden brown in color.

5.     Serve as an appetizer or fantastic side dish with applesauce.
