Macaroni No Cheese

INGREDIENTS:
·      6 ounces uncooked macaroni
·      1/2 cup sautéed onions

FOR THE SAUCE:
·      1 cup water
·      1 potato, peeled & diced
·      1 small carrot, diced
·      1 small onion, diced
·      1/2 cup tofu, chopped
·      1/2 cup nutritional yeast
·      1 Tablespoon lemon juice
·      1 teaspoon salt
·      dash garlic powder

 
INSTRUCTIONS:

Preheat oven to 350 degrees.

1.  Boil pasta according to package directions until al dente (don't overcook!)  Make sauce while pasta is boiling as follows:

2.  In a small pan, cook potato, carrot and onion in water.

3.  When soft, transfer vegetables to a blender.  Add remaining ingredients (except for sautéed onions) and blend until completely smooth.

4.  Drain macaroni and mix with sauce.

5.  Top with sautéed onion and bake at 350 degrees for 20 minutes.

6.  Allow to sit 10-15 minutes before serving.
