Italian Sun Dried Tomatoes

This is a family favorite right out of the jar, but when you use the contents don’t miss out on the delicious and healthy olive oil!

INGREDIENTS:

  • olive oil
  • garlic cloves
  • fresh basil, oregano and rosemary
  • 4 pounds Roma tomatoes, halved lengthwise

INSTRUCTIONS:

1.  Begin by dehydrating your Roma tomatoes either in a dehydrator or in the oven set on the lowest temperature.  Finished tomatoes should be dry but not brittle.

2.  Into clean jars place 2 cloves of garlic each, followed by a layer of sun dried tomatoes about half of the jar high.

3.  Next a layer fresh herbs, followed by more tomatoes nearly to the top of the jar.

4.  Finish by filling the jar with good quality olive oil.

5.  Refrigerate for up to 9 months if jars are properly sterilized before use.
