INGREDIENTS:

  • 1 can diced tomatoes
  • 1/2 medium onion, chopped
  • 2 gloves garlic, minced
  • 1/4 cup capers
  • 1/2 cup Kalamata olives
  • 3 Tablespoons olive oil
  • 3 Tablespoons Port wine (sub any rich red wine)
  • salt & pepper

INSTRUCTIONS:

1.   Sauté onions and garlic in oil until translucent.

2.  Add diced tomatoes, capers, olives and wine.  Add salt & pepper to taste.

3.  Stir and simmer for 1 hour, partially covered.
