Vegetarian Tzatziki Sauce

INGREDIENTS:

·      1 16 ounce container sour cream

·      1 large cucumber (or 2 med.), peeled, deseeded and diced insanely small

·      2 cloves freshly crushed garlic

·      1 tbsp white vinegar

INSTRUCTIONS:

1.     Put the cucumber in cheese cloth or another lint-free cloth and press out as much liquid as you can (you want the cucumber as dry as possible). You won’t be using the liquid for anything in this recipe.

2.     Mix the dry cucumber bits with the other ingredients all together really well.

3.     Chill for at least an hour.
