Homemade Tomato Sauce

Once you have made this recipe a time or two you will never want to use pre-packaged sauce again.  The difference really is that tremendous.  Try it and you’ll see for yourself.

INGREDIENTS:

  • 5 pounds tomatoes
  • 1 medium yellow onion
  • 2 green peppers
  • 1 small jalapeno pepper
  • 4 cloves of garlic
  • salt and pepper

INSTRUCTIONS:

1.     Slip tomatoes into a pot of boiling water for a few seconds and remove to a bowl of ice water in the sink.  The skins will slide off easily.  Chop the tomatoes and place in the blender for a few seconds until smooth.  Transfer to a large stock pot over medium heat.

2.     Peel and chop onions, de-seed peppers and peel garlic.  Place all three ingredients in the blender with a bit of pureed tomatoes and blend until smooth.  Transfer to the stock pot.

3.     Bring the pot to a low boil then reduce heat and simmer for 2 hours or until the desired consistency has been reached.  Stir often to avoid scorching.
