Cranberry Basil Vinaigrett

INGREDIENTS:

  • 3/4 cup frozen cranberries
  • 1/2 cup olive oil
  • 1/4 cup red raspberry vinegar
  • 1/3 cup freshly chopped basil
  • 2 T. shallots, minced
  • 1 T. garlic, minced
  • 1 t. Dijon mustard
  • 1/3 cup cranberry juice
  • 1/4 cup walnut oil
  • 2 T. maple syrup or brown rice syrup
  • salt & pepper

INSTRUCTIONS:

1.  Blend in blender or food processor until smooth and well blended.

2.  Allow to settle and whisk before serving.
