Simple Lemon Ice

INGREDIENTS:
• 2 cups water
• 1 cup vegan sugar
• 2 Tablespoons fresh grated lemon rind
• 1/3 cup fresh lemon juice
• pinch salt
INSTRUCTIONS:
1. Boil water.
2. Stir in all ingredients until sugar is dissolved.
3. Allow to cool before pouring mixture into ice cube trays and freezing.
4. Pop cubes out of trays and process with a food processor until smooth.
