Pumpkin Cheesecake

INGREDIENTS:

• 1½ c graham crackers
• 1 teaspoon flour
• 3/4 cup sugar
• ¼ cup butter (melted)
• 1 cup canned pumpkin
• 2 eggs
• 1 teaspoon vanilla
• 2 packages cream cheese, softened chunked

INSTRUCTIONS:

1. Crush graham crackers and mix well with flour, 1/4 cup of sugar and melted butter. Press into pie plate and refrigerate for at least 30-45 minutes.
2. Preheat oven to 350 degrees.
3. Beat eggs, 1/2 cup sugar and vanilla and add cream cheese, beating until smooth.
4. Mix in pumpkin.
5. Spread into graham cracker crust and bake for 30-35 minutes or until center is no longer loose.
6. Allow to cool to room temperature then refrigerate until well cooled, usually about 4 hours before serving.
