Gluten-Free Apple Cobbler
COBBLER INGREDIENTS:
• 1/2 cup almond flour
• 1/4 cup tapioca flour
• 1/4 cup potato starch
• 4 Tablespoons sugar
• 1 teaspoon salt
• 1/2 teaspoon cardamom
• 1/2 teaspoon ground cloves
• 3 Tablespoons unsalted butter, cut up
• 1/4 cup sour cream
FILLING INGREDIENTS:
• 4 pounds fresh apples
• 1 Tablespoon lemon juice
• 3/4 cup vegan sugar
• 1/4 teaspoon ground cloves
• 2 teaspoons vanilla
INSTRUCTIONS:
Preheat the oven to 375 degrees.
1. Peel and core apples, cutting them into small chunks.
2. Place apples in a 9″ square baking dish and coat with lemon juice.
3. Top with sugar, cloves and vanilla and stir to mix.
4. Mix flours, sugar and spices. Cut butter into the dry mixture until it comes together.
5. Stir in sour cream until just blended.
6. Carefully shape a roughly 9″ square and place between sheets of wax paper. Refrigerate 15 minutes before placing it atop the apples.
7. Bake at 375 degrees for 35 minutes.
