Fun Fruit Leather

Not only are these expensive at the store, they are full of preservatives, additives and who knows what else. Making your own fruit leathers is fun and so easy you can do it with your kids. They will love being able to have a hand in the flavors and colors!

INGREDIENTS:

• fresh fruit (strawberries, bananas, blueberries, apricots, plums, apples, pears)
• lemon juice
• agave nectar

INSTRUCTIONS:

You’ll notice there are no measurements in the ingredients list of this recipe, that’s because this is a very individual project that can make excellent use of whatever fruit you happen to have on hand. The only thing you need to remember is 1/2 cup of water per 4 cups of fruit.

1. Wash, core and cut up fruit into fairly small pieces of no larger than an inch or so.
2. Place 4 cups of fruit in a saucepan with 1/2 cup water and cook for about 15 minutes or until the fruit is soft. Stir in lemon juice and sweetener to taste.
3. Allow fruit to cool then process in the blender or food processor until smooth.
4. Cover a food dehydrator tray with plastic wrap and pour fruit puree to cover the bottom of the tray. Repeat the process until all fruit is used up.
5. Turn dehydrator on and allow to run until fruit leather is formed, generally 6-8 hours in dry weather, or longer in humid conditions.
6. The plastic wrap base makes storing your fruit leather a snap. Simply roll the fruit leather up in the plastic wrap, place in a zipper bag or other sealed container and store in the refrigerator.
