Cranberry Nut Bread

INGREDIENTS:
• 2 cups cranberries
• ½ cup sugar
• orange zest from one orange
• 1 Tablespoon orange juice
• 6 Tablespoons butter or margarine
• ¾ c light brown sugar, packed
• 2 eggs at room temperature or egg alternative
• 1 teaspoon baking soda
• 1½ teaspoon baking powder
• ½ teaspoon salt
• 1 cup buttermilk or rice milk with a teaspoon of lemon juice
• 2½ cups flour
• 1/8 teaspoon cloves
• 1 cup pecans, chopped
INSTRUCTIONS:
1. Preheat oven to 375 degrees. Grease and flour bread pan.
2. In a saucepan, combine cranberries, sugar, orange zest and orange juice. Boil a few minutes until sugar is well dissolved and berries have burst.
3. In a mixing bowl, cream butter and sugar and beat in one egg at a time until smooth. Add buttermilk.
4. In another bowl combine remaining ingredients (except for nuts)
5. Mix half of the dry mix with the creamed butter mixture, add berries and stir. Mix remaining dry ingredients and fold in nuts, careful not to over mix.
6. Pour into bread pan and bake 60 minutes or until the top is evenly browned and spongy to the touch.
