Cranberry Muffins

INGREDIENTS:

• 2 cups whole wheat flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 Tablespoons tofu
• 1 banana
• 1/4 cup oil
• 1/4 cup maple syrup
• 1 1/2 cups rice milk
• 1/2 cup dried cranberries

INSTRUCTIONS:

Preheat oven to 400 degrees and spray a muffin tin or use paper liners.

1. In a mixing bowl, combine dry ingredients and sift together using a whisk.
2. In a blender, combine tofu and banana until smooth. Add wet ingredients and pulse to blend.
3. Pour wet ingredients into dry and stir thoroughly.
4. Fold in cranberries.
5. Spoon batter into muffin tins, filling each about 3/4 full.
6. Bake at 400 degrees for 18-20 minutes.
