Chocolate Almond Dreams
These recipes are not divided by age groups or special diets because at heart we all love snacks like we did when we were kids, so we should all be able to enjoy them regardless of our dietary restrictions. With that in mind, all recipes in the Drinks, Desserts & Snacks section are 100% vegan-ready or there are simple vegan alternatives available!
NOTE: None of these recipes contain soy or soy products.

INGREDIENTS:
• 1 cup cashews
• 1 cup dried apricots
• almond essence (to taste)
• melted carob or vegan chocolate
• shredded coconut
INSTRUCTIONS:
1. Place cashews and apricots in a food processor and blend until completely smooth. Add almond essence in small increments, blend and taste until the taste is similar to marzipan.
2. Scoop mixture out by small spoonfuls and form into 1″ balls, placing them on waxed paper until you are finished with the mix.
3. Using a toothpick, dip each ball into melted carob or vegan chocolate and return to wax paper.
4. Sprinkle freshly-dipped balls with shredded coconut while they are still wet.
