Banana Muffins

INGREDIENTS:

• 3 very ripe bananas
• 1/4 cup vegetable oil or melted margarine
• 1 cup sugar
• 2 cups flour
• 1 tsp. salt
• 1 tsp. baking soda
• 1 cup chopped nuts (optional)
INSTRUCTIONS:
1. In a large bowl, mash bananas, oil and sugar until well blended.
2. Sift together flour, baking soda and salt.
3. Combine flour mixture and banana mixture and mix by hand just until everything is combined.
4. Ladle batter into greased muffin pan and bake at 350 degrees for 15-20 minutes or until a toothpick inserted in the center comes out clean.
