Amazing Lemon Bars

INGREDIENTS FOR CRUST:
• 1/2 cup room temperature margarine
• 1/4 cup confectioners’ sugar
• 1 cup unbleached all-purpose flour
INGREDIENTS FOR FILLING:
• 1/2 cup silken tofu (soft or firm)
• 1 cup granulated sugar
• Zest from 2 lemons
• 1/3 cup fresh lemon juice
• 2 tablespoons unbleached all-purpose flour
• 1 tablespoon cornstarch
INSTRUCTIONS:
Preheat oven to 350 degrees.
1. Spray 8 x 8 baking pan with cooking spray and dust lightly with flour.
2. For the crust, cream butter and confectioners’ sugar with a mixer until fluffy. Introduce the flour slowly and beat continuously until a soft dough is formed.
3. Press crust into the baking pan and bake for 15-20 minutes until just browned.
4. Set crust aside to cool.
5. For the filling, place tofu and remaining ingredients in a blender or food processor and blend until smooth and creamy.
6. Pour filling over the crust and bake another 15-20 minutes, until the filling is set up.
7. Remove from oven and allow to cool completely before cutting.
