Stir Fry with Noodles

INGREDIENTS:

•               1 green bell pepper

•               1 red bell pepper

•               1 yellow bell pepper

•               1 purple onion

•               3 carrots

•               2 stalks celery

•               1 crown broccoli

•               1/2 box spaghetti noodles

•               soy sauce or Bragg’s Amino Acids

•               salt & pepper

•               olive oil

INSTRUCTIONS:

1.     Boil water for spaghetti and prepare according to package directions.

2.     Begin cutting peppers and onions into long strips.

3.     Slice carrots at a slight angle for visual interest.

4.     Chop celery and broccoli.

5.     In a wok or large frying pan, heat olive oil (whole olive oil, not Extra Virgin).

6.     Add vegetables and toss well to coat with oil.

7.     Add a dash of soy sauce and cook on high heat, stirring constantly.  If necessary, add a bit of water and cover to help cook veggies.

8.     Serve atop noodles with soy sauce.
