Split Lentils and Brown Rice

INGREDIENTS:

  • 1 cup split lentils, uncooked
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cups brown rice, cooked
  • salt & black pepper
  • pinch cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • water or broth

INSTRUCTIONS:

1.  In a saucepan with a lid, add about 1/2 cup water, carrots, celery and onion and cook over medium heat (covered) for 5-7 minutes or until slightly tender.

2.  Add split lentils and seasonings and stir, adding water to about an inch above all ingredients.

3.  Cover and simmer for 15-20 minutes or until lentils are tender.

4.  Stir in brown rice and adjust seasoning as needed to taste.
