Perfect Fried Rice

INGREDIENTS:
- 6 cups brown rice, cooked
- 1/3 cup soy sauce
- 2 Tablespoons olive oil
- 2 Tablespoons sesame oil
- 1/3 cup minced onion
- 3 garlic cloves, minced
- 3 cups baby spinach, chopped
- 1 cup cabbage, shredded
- 2 cups fresh mushrooms, chopped
- 1 small red bell pepper, chopped
- 1 Tablespoon rice wine vinegar
- 1 Tablespoon agave nectar
INSTRUCTIONS:
1. Sauté onion, garlic, cabbage and mushrooms until tender.
2. Add onions and spinach and cook until wilted.
3. Add remaining ingredients and cook until rice is heated through.
You can also add tofu or egg to this dish as well as any other vegetable bits you might have left over in the fridge. Experiment and find the right combination for you!
