Kenya Casserole

INGREDIENTS:
- 2 cups tomatoes, chopped
- 1/2 cup diced onion
- 3 cloves of garlic, minced
- 1 tablespoon canola oil
- 2 ounces raisins
- 3/4 cup shredded cheddar or vegan cheeze
- 2 medium eggplants
- 1/2 cup breadcrumbs
- 3 tablespoons peanuts
- salt & pepper
INSTRUCTIONS:
Preheat oven to 325 degrees.
1. Soak raisins for 1 hour before beginning recipe.
2. Peel and cube the eggplant and steam lightly.
3. Sauté onion and garlic until translucent.
4. Add tomatoes to onion and stir well, cooking for a couple of minutes before lowering the heat.
5. Add the nuts, breadcrumbs and raisins (drained) and mix.
6. Toss in the eggplant and a sprinkle of salt & pepper and spread in a baking dish coated with cooking spray.
7. Top with cheese and bake at 325 for 25 minutes or until bubbly and golden.
