Broccoli Curry

INGREDIENTS:
- 2 Tablespoons oil
- 1 Tablespoon poppy seeds
- 2 Tablespoons sesame seeds
- 1/8 cup shredded coconut
- 1 knuckle of ginger, peeled and thinly sliced
- 1/8 cup raw peanuts
- 1 medium onion, sliced thin
- 2 medium tomatoes, chopped
- 1 pound broccoli, chunked
- salt
- pinch chili powder
- pinch cayenne
- pinch turmeric
INSTRUCTIONS:
1. Heat half of the oil and brown seeds for 60 seconds.
2. Add ginger and coconut and cook to golden brown.
3. Add nuts and seasonings, stir and cook another 60 seconds.
4. Transfer mixture to food processor and process until smooth.
5. Heat remaining oil and cook onions until translucent, then add tomatoes and allow juices to evaporate, about 7-10 minutes.
6. Stir in processed mixture and broccoli along with 2 cups of water. Cover and simmer for 25 minutes, until broccoli is fork tender.
