Veggie123 Cookbook Introduction

It seems there is no end to the questions about vegetarian and vegan diets these days.  Whether people are doing it for weight loss, for spiritual reasons or even just to get themselves in better health, an ever-increasing number of people are looking to meatless diets for their futures and that of their families.

Who knew there could be such a huge variety of different schools of thought when it comes to meatless meals?  There are those vegetarians who use milk and dairy products and those who don’t.  There are those who think the use of honey is acceptable and those who consider it an animal product and as such decide against its use.

There are raw food vegans who don’t believe in eating anything that has been heated over 110 degrees and then there are those who believe there to be evidence that consuming soy is bad for you.  Because we believe the last group – the soy-free vegetarians and vegans – are underserved, the larger majority of recipes here are entirely soy-free and those that are not contain nominal amounts of soy sauce, a fermented form of soy.

So if you’ve decided to go vegetarian or vegan, you might be at a loss for what you should do next, right?

Your friends joke that all you can eat now are salads and you want to prove them wrong but you really aren’t sure what you can eat.  You have come to the right place!  This is a collection of recipes for every meal of the day plus desserts, sauces, dressings… you name it and they are all vegetarian or vegan!

Rather than divide things into two categories we chose to celebrate our similarities by combining the vegetarian and vegan recipes into the same cookbook with notes that let you quickly see the difference.  How’s this – most recipes will contain a vegan alternative! Just look for the green writing to instantly spot the vegan choices and replace those ingredients accordingly.  If there are alternate preparation instructions, those will also be in green writing.

Enough small talk, let’s get down to it!  Wherever possible, we’ve sub-divided the main category into special sections that focus on the dietary needs of babies, teens and adults as well as those suffering from high cholesterol, heart disease and diabetes.  In other words, you are sure to find vegetarian and vegan recipes here for nearly anyone!
