World’s Best Pancakes

You will never use a mix again.  Serve with Strawberry syrup (recipe in the Sauces and Dressing section)

INGREDIENTS:

  • 2 eggs or 2 Tablespoons ground flaxseed and 4 Tablespoons water
  • 2 cups buttermilk or 2 cups rice milk and 1 Tablespoon cider vinegar
  • 2 Tablespoons vegetable oil
  • 2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt

INSTRUCTIONS:

1.     Sift dry ingredients together in a large mixing bowl.

2.     In a separate bowl, whisk eggs, buttermilk and oil and whisk liquid and dry ingredients together until smooth.

3.     Heat oil, cooking spray or margarine in a large skillet or griddle pan and ladle batter into the hot pan.  Turn pancakes when the edges begin to dry and bubble.
