The 10 Minute Sweet Potato

I know what you’re thinking – sweet potato for breakfast?  That’s what I thought too until I tried it once.

INGREDIENTS:

  • 1 sweet potato
  • cinnamon
  • fresh almond or peanut butter
  • stevia as needed

INSTRUCTIONS:

1.  About 5 minutes in the microwave and your sweet potato will be good to go.  For best results wrap it in plastic wrap and poke it a few times with a fork.

2.  Add a big dollop of fresh nut butter and a smidge of cinnamon and sprinkle a little sugar or stevia as needed for sweetness.

3.  What?  You wanted more?  Eat breakfast already!
