Eggplant “Meat”balls

INGREDIENTS:

• 3 tablespoons olive oil
• 3 cloves garlic, minced
• 4 cups cubed eggplant, with peel
• 1 tablespoon water
• 1 cup chopped fresh parsley
• 2 egg substitutes
• 3/4 cup dried bread crumbs

INSTRUCTIONS:

1. Preheat oven to 350 & spray baking sheet with cooking spray.
2. Over medium heat, sauté garlic.
3. Mix in eggplant and water, reduce heat and cover.
4. Steam for 20 minutes or so, until eggplant is soft.
5. Remove lid, remove from heat and allow to cool.
6. Mix remaining ingredients with eggplant and stir until combined. Add more bread crumbs as needed.
7. Refrigerate 30 minutes and form into meatballs or patties.
8. Place on baking sheet and bake for 30 minutes at 350 degrees.
