Green “Alien” Pudding

INGREDIENTS:
- 1 medium avocado
- 1/2 cup milk or almond / rice milk
- 5 teaspoons honey or agave nectar
- 4 teaspoons lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon salt
INSTRUCTIONS:
1. Put all ingredients into a blender or food processor and blend until smooth and fluffy.
2. To prevent browning on the surface when storing in the fridge, press plastic wrap to the surface of the pudding.

Lentil Soup

INGREDIENTS:
- 1/4 cup dried red lentils
- 1 small potato
- 1 Tablespoon tomato juice
- 1 carrot
INSTRUCTIONS:
1. Rinse lentils in cool water, peel and dice potato and carrot.
2. Put all ingredients in a small saucepan with just enough fresh water to cover everything.
3. Bring to a slight boil then simmer until water is absorbed and vegetables are soft.
4. Cool, then puree until smooth.
