Poor Man’s Veggie Burger

Experiment with this basic recipe by adding whatever makes you happy.  Onions, salsa, peppers… give it a try!  These burgers freeze well and will microwave in a jiffy for a quick delicious meal.

INGREDIENTS:

  • 1 can pinto beans
  • 1/2 cup quick cooking oats
  • water
  • seasoning as desired

INSTRUCTIONS:

1.  Drain and rinse beans and place in a mixing bowl.

2.  Mash beans with a fork but leave lumpy.

3.  Add oats and seasoning and mix well.

4.  Add water only as necessary to form patties.

5.  Fry in a nonstick pan sprayed lightly with cooking spray

Awesome Veggie Pad Thai

INGREDIENTS:

  • 1 egg
  • 4 teaspoons soy sauce
  • 2 Tablespoons white vinegar
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 1/3 cup firm tofu – sliced thin
  • 1-1/2 cup green chives, chopped
  • 2 Tablespoons peanuts
  • 1 1/3 cup bean sprouts
  • 2 Tablespoons sugar
  • 1/2 tsp ground chili
  • 1/4 tsp ground pepper
  • 1/2 standard package Thai rice noodles
  • 2 Tablespoons vegetable oil

INSTRUCTIONS:

1.  Soak rice noodles in a bowl of warm water for 5 minutes.

2.  Heat oil in a large skillet (or wok) on high heat.

3.  Sauté garlic, shallots and tofu until slightly browned.

4.  Drain rice noodles and add them to the wok.

5.  Add vinegar, sugar, soy sauce and chili and stir.

6.  Crack egg into wok and fry it to one side, folding it into the mixture as it is cooked through.

7.  Add remaining ingredients and serve.
