Amazing Gluten Free Crepes

INGREDIENTS:

  • 1/2 cup white rice flour
  • 3 eggs, beaten  or 3 Tablespoons ground flaxseed and 6 Tablespoons water
  • 3/4 cups milk or almond milk
  • 1/8 cup brandy
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter  or margarine

INSTRUCTIONS:

1.     Add flour, salt, eggs, milk and brandy to a large bowl and whisk well.

2.     Stir in melted butter and cover bowl, setting aside for half an hour.

3.     Cooking crepes can be a bit tricky and will take a little practice but you’ll get it in no time.  You must use a nonstick skillet over medium heat or you’re asking for trouble, trust me.

4.     Pour just enough batter into the skillet to barely coat the bottom of the pan.  Swirl the batter to spread quickly.

5.     Cook over medium heat until the edges begin to curl and lift from the pan on their own, then flip the crepe and cook the other side for 30 seconds or so.  Don’t overcook or you can’t roll them up!

The Famous Crockpot Breakfast

INGREDIENTS:

  • 1/4 cup short grain brown rice
  • 1/4 cup millet
  • 1/4 cup barley
  • 1/4 cup dried fruit (your choice)
  • 4 cups water
  • squeeze of lemon juice
  • 1 teaspoon vanilla flavoring
  • pinch cinnamon
  • milk, almond or rice milk

INSTRUCTIONS:

This really is the ultimate timesaving breakfast.  Just combine all the ingredients in your crock, cover and set on low before you go to bed at night.  In the morning, stir and serve with your favorite milk.

Baked Breakfast Apples

INGREDIENTS:

  • 2 apples
  • 1 Tablespoon raisins
  • Orange juice
  • Cinnamon

INSTRUCTIONS:

  1. Peel, half and core the apples and play them in a small baking dish.
  2. Pour orange juice over the apples and sprinkle with cinnamon.
  3. Bake at 350 degrees for about 20-25 minutes or until fork tender.

Add raisins to the baking dish in the last 5 minutes of baking time

Nanny’s Breakfast Rice

This is a great recipe for using leftover rice.  It is so sweet and decadent, one bite is all it will take and you’ll never hear anyone question you about using rice for breakfast again.

INGREDIENTS:

  • 3/4 cup of cooked brown rice
  • 1/2 cup milk (rice or almond milk works well)
  • 1 Tablespoon candied ginger, chopped
  • 1 Tablespoon dried cranberries or raisins

INSTRUCTIONS:

Heat and eat!

Hearty Breakfast Potatoes

vegan

INGREDIENTS:

  • potatoes, cut into 1″ cubes
  • onion, diced
  • olive oil
  • garlic
  • sea salt
  • pepper

INSTRUCTIONS:

In a large skillet heat a small amount of olive oil over medium high heat and add potatoes, onion and garlic, turning periodically to allow everything to brown evenly.  Finish with a sprinkle of sea salt and pepper and get ready for a delish side dish!


TIP:
For a Southwestern twist, add some chopped red or green peppers or even some jalapeno to the mix!
